Civil & Identity Documents [UK to Canada]

I am a Canadian Citizen living the the UK with my British husband.

We've got our entire application ready which we are planning to send off in a couple of weeks, but had a question regarding submitting our civil and identity documents. 

Document                           Original or Photocopy ?
Passports
Marriage Certificate
Birth Certificates

If submitting photocopies, will they request my UK husband's passport once he is approved for his visa?

Read the instructions. Follow the instructions. I believe they clearly state what must be original documents and what should be photocopied. Identity documents like those you have listed, as I recall, should be photocopied, subject to originals being required in certain cases, such as if the applicant is interviewed. But, again, follow the instructions (see the checklists, they clearly specify what is to be an original and what is to be photocopied).

The applicant will of course have to submit the actual/original passport when requested in order to have the PR visa affixed in it. And of course this will have to be presented at the time the applicant lands and becomes a PR.

BTW: Not an expert, not a Can. lawyer, never worked in immigration
